Yeast is a living microorganism. We don’t make yeast—God already did that for us! In order to get more yeast, you have to grow it. The good thing about growing yeast is that you don’t need a lot to get started. You start off with an existing yeast culture, usually from a previous batch.
Warm water “wakes” yeast cells up, or activates them, and they become hungry. When activated yeast is mixed into dough it transforms the dough. It does this by gobbling up sugar nutrients and that allows yeast to “breathe” a gas called carbon dioxide. This process allows it grow and, after some time passes, causes the dough to expand and get bigger.
Yeast is rich in protein, minerals, carbohydrates, and vitamin B. Therefore it is also used to enrich human and animal diets. Yeasts have also been used to decompose, or break down, waste and to help clean up oils spills and other pollution.
